Red Pkhali – cook beets with walnut-garlic dressing
Pkhali is a Georgian vegetable dish which can be made with different ingredients from beetroots or spinach to cabbage and even nettles. The main ingredient which makes pkhali so piquant is walnut-garlic dressing.

Ingredients:

4-5 beets, average sized
1 cup of walnuts (the amount is arbitrary)
2-4 cloves of garlic
Salt and black pepper
Ground red pepper
Pomegranate seeds
1 bundle of coriander
Vinegar

Preparation:


Boil the beets, let them cool down and grate them. Let walnuts through the grinder,
squeeze garlic into paste, slice up coriander and mix them with beets, add salt, red and black pepper and vinegar to your liking. Throw in pomegranate seeds. Mix everything well and put it into the fridge to let the taste sink in.
This is it, delicious pkhali is ready!
