Abkhazura – Fried Spicy Meatballs

Abkhazura is a dish from the sea-side region of Abkhazia. To cook delicious Abkhazura you need to roll meat in caul fat, season it with spices and fry it on a pan or ketsi.


100-120 g Caul fat
500 g Beef mince
500 g Pork mince
1 bunch parsley
½ bunch dill
1 green pepper
2 bunches coriander
2 onions
70 g pomegranate
1 tsp dried savory
5 pressed onions
Salt, pepper to taste


Get the ingredients ready.
Mix garlic, coriander, dill, dried coriander and pomegranate and add to the mincemeat.
Chop coriander, parsley and dill finely; cut onions into large pieces and pepper - into thin circles. Be sure to use whole fat. Put caul fat on the board. Turn up its sides carefully and roll in the mince. Abkhazura should be rolled tightly.
Put the ready Abkhazura on ketsi. You may fry it both in the oven and on a pan. Put ketsi in the heated oven for 20-25 minutes. Abkhazura should be fried well.
Take fried Abkhazura from the oven and sprinkle it with chopped onions, greens and pepper. Serve Abkhazura hot.
