Kubdari – A Signature Dish of Svaneti
Kubdari is a pastry, prepared of chopped meat, which is traditionally cooked in the mountaineous Svaneti region of Georgia. Kubdari, seasoned with plenty of spices is baked in the oven or on the pan.

Ingredients:


For dough
1 kg flour
15-20 g dry yeast
120 ml warm milk or water
50 ml oil
1 tsp salt
2 egg yolks

For stuffing

500 g pork
500 g beef
3 onions
2 tsp dried coriander
2 tsp caraway
2 tsp thyme
Salt,
black pepper, red pepper – to taste
50 g butter for spreading on top

Step-by-Step:

Prepare necessary ingredients: meat, onion, spices.
Cut meat pieces very finely.
Chop onions finely.
Seasoning. Sprinkle the meat with salt and spices.
Knead the dough as described in the Khachapuri recipe.
Add to the chopped meat onions, oil and mix well by hand. Meat softens and gets imbued with spices.
Divide dough into balls and roll them out. Put mincemeat on each flattened dough disc.
Tie the edges together.
Roll out Kubdari first by hand, then by dough roller. Bake for 20-25 minutes.
Kubdari is cooked differently in Svaneti. There dough is thicker; stuffing - juicier. They mix mincemeat with spices for about 40 minutes. Kubdari is fried on both sides on the pan; then it is baked in the oven. Mountain savory gives special flavor to Kubdari. You can use more or less amount of spices according to your taste.
Serve Kubdari hot.
