Tsandili – Georgian ritual desert with honey
Tsandili is prepared with cereal seasoned with raisins and walnuts. It is a traditional Georgian desert which was mainly cooked during Lent over the centuries and in some ways is a ritual dish prepared to commemorate the deceased. In Eastern regions of Georgia Tsandili is often called Korkoti and the recipe might also be slightly different. In our recipe, we added honey, dried apricots and white cherry jam to the dish.



Ingredients:

600 g. cereal
250 g. walnuts
200 g.
honey
1 cup white cherry jam
200 g. raisins
200 g. dried apricots
sugar, salt, vanilla – to taste

Preparation method:

Prepare necessary ingredients: cereal, honey, walnuts, raisins, dried apricots, white cherry jam and sugar.
Cut dried apricots and walnuts, rinse and dry the raisins. Pour water on cereal and boil it well.
Sieve cereals, leaving some broth.
Add chopped walnuts to the boiled cereal.
Add chopped dried apricots. Add raisins. Add white cherry jam.
Sprinkle with sugar.
In the end add honey and bring to boil again. Serve Tsandili cold.

Traditional Tsandili is made of walnuts, raisin and honey. You may add various jams and dried fruit according to your taste.
