Ajika with walnuts – You will never forget this taste!
Ajika is a hot and spicy Georgian sauce, which originated in Samegrelo and Abkhazia regions and is used both country-wide and abroad nowadays. Its main ingredients are red pepper, garlic and dried spices, although there exist many variations of it. One of the most prominent among them is ajika with walnuts, which makes a perfect addition to fish and meat as well as dishes containing potatoes, beans and tomatoes.

Ingredients

1kg of chili peppers
400g of garlic
300g of walnuts
100g of coriander
2 tbsp of dried summer savory
3 tbsp of ground dried coriander
100 ml of vinegar
50 ml of oil
50g of salt

Preparation

Lay out chili peppers on a rug and leave them outside for a day to let them wither and go soft. Once they are ready, put on gloves, remove the stalks and thoroughly clean them of seeds. Run peppers, walnuts, garlic and coriander through a meat grinder, add salt and remaining ingredients to the mix and stir everything into consistent paste. The ajika is ready.
Store in a glass jar in a refrigerator.
