It’s definitely worth a try – Golden eggplants filled with walnuts

The eggplant has a long history in Georgian cuisine. Many dishes are made with this vegetable; however eggplant with walnuts is considered the king of Georgian cold dishes.

This awesome video from Gastro Lab - Less Talk, More Cooking explains how to make appetizing nigvziani badrijani (eggplant stuffed with walnut paste) with a slightly different technique. The video is accompanied by some traditional Georgian music that will surely cheer you up.

Ingredients:

Eggplants 500G
Garlic 3-4 cloves
Walnuts 1 cup
Cilantro 4-5 springs
Coriander 1tsp
Wine Vinegar 2 tbsp
Olive oil 100 ML
Saffron 1/ 4 tsp
Khmeli suneli (dried seasoning) to taste
1/2 glass boiled water
Salt to taste
