Lobio in a bread bowl from Downtown – You simply have to try it!
Lobio is a delicious staple of Georgian cuisine made from kidney beans. Spicy lobio is an equally favorite dish for both natives and tourists. If you want to enjoy the real taste of kidney beans prepared in Georgian style, then Downtown restaurant is just the place for you. There, you will be able to taste delicious lobio prepared in a slightly modern way, along with other traditional Georgian as well as Europe
an dishes and desserts. You will also be given an opportunity to help yourself to a big variety of dishes such as khachapuri (Georgian cheese bread), lobiani (Georgian bread with mashed beans), pkhali (spinach with walnuts) and tender donuts with lemon cream to top your meal off.
As a gesture of goodwill, chef of Downtown has prepared lobio in a bread bowl specially for Georgian Journal and shared its recipe with us.

Ingredients:

150 grams of red lobio (kidney beans)
80 grams of bacon
70 grams of fresh coriander and celery
A loaf of round bread
One onion
Two cloves of garlic
Two laurel leaves
30 grams of tomato paste
3 grams of dried coriander
3 grams of dried seasoning
3 grams of savory
3 grams ground red pepper
Salt and pepper (to taste)

Preparation:

Boil kidney beans together with laurel leaves. Fry chopped onions in a well-oiled pan, add tomato paste and spices and stir. When the beans are boiled, remove the laurel leaves and add beans to the pan as well. Mix everything, slightly mashing the beans in the process. After that, add mashed garlic and chopped greens into the mixture and let it cook for two more minutes. On a separate, unoiled pan, give the bacon a light browning. Take the loaf, cut off its top and remove a large portion of breadcrumbs to create a bowl. Pour lobio into the bowl and serve with fried bacon, salsa sauce and jalapeno pepper.
