Shila plavi – Creamy rice with mushrooms and white wine

Shila plavi is a traditional Georgian dish made with rice, similar to Italian risotto.


The dish is usually served at funerals and has a degree of ritualistic significance attributed to it. There are two versions of shila plavi: with meat and with mushrooms. Here we present the recipe of the delicious vegan version, with mushrooms and white wine.

Ingredients:

1 kg of any type of mushrooms

200 grams of round rice

200 grams of onion

20grams of garlic

1, 5 tsp of cumin

1 tsp of saffron

50 ml of white wine

400-500 ml of boiled water

100 ml of oil

Black pepper and salt to taste

 

Preparation:

Wash the mushrooms and cut them into small cubes. Chop up the onions and fry them in an oiled saucepan until translucent. Add saffron, crushed garlic, washed rice and mix. Three or four minutes later, add chopped mushrooms and let the mixture cook for 5 more minutes. Add wine, stirring continuously until absorbed.

Add 400-500 ml of boiled water to the mixture and let the mass cook until the rice is ready. You can regulate thickness of the dish by adding more water over time. Your aim is to have the dish assume a creamy consistency. Once this is achieved, add cumin, pepper and salt. You can serve the dish with grated cheese on top.
