Perfect summer dish - Light and refreshing salad with grilled eggplant
Georgian cuisine is rich with dishes made from eggplant. Salad with grilled eggplant, presented here, is an excellent example of such a dish and is very easy to make. It has few calories, to boot. Many compare this refreshing summer salad to the famous ratatouille.

Ingredients:

Two 450g eggplants
One hot pepper
Olive oil
1/4 cup of chopped cilantro
Three tablespoons of vinegar
One garlic clove
Five medium tomatoes
One red onion
Two tablespoons of chopped walnuts
Salt to taste
Few leaves of red basil


Preparation:

Grill eggplants on a special grill or bake them in the oven on moderate heat until they become soft and tender. Once they do, peel them and chop into small cubes. Grill (or bake) the hot pepper for about four minutes, then remove the seeds and chop it finely.
Place the chopped eggplant, tomatoes (better peel it), pepper, cilantro,red basil and minced garlic in a bowl. Add thinly sliced onion rings, vinegar, a little bit of olive oil (to your taste), salt and mix well. You can garnish the dish with chopped walnuts and serve it with grilled flatbread or mchadi (Georgian cornbread).
