Fried quail is another popular dish in Georgian cuisine.
The dish is usually consumed with tkemali (sour plum sauce), blackberry or nut sauce. Here we offer unique recipe of fried quail with almond sauce that is notable for its delicate and slightly spicy flavor.
Ingredients:
5 quails (serves five people)
150 grams of almond or nut
2 tbsp of olive oil
5ml of lemon juice
1 /2 tsp of dried seasoning
1 / 4 tsp of dried coriander
One small clove of garlic
1/2 tsp of saffron
Crushed red hot pepper and salt to taste
Preparation:
Fry quails in oily pan for 2-3 minutes on both sides on high heat. Then place slightly roasted quails in the oven preheated at 220 degrees C for 15 minutes. For better taste, you can pour white wine over them as well.
Blend almonds (nuts), lemon juice, garlic, all the spices and a little bit of warm water together. Place fried quail on a plate, pour the almond sauce over it and garnish with basil leaf or any kind of fresh greens.
