Penovani khachapuri - Golden, crunchy and delicious
Georgia can boast with a large variety of its national dish khachapuri - a cheese pie also known as cheese-bread. Its shape and taste depends on the region of Georgia they are made in. Here we present you the recipe of a rather modern and extremely delicious puff khachapuri called penovani (layered).

Ingredients:


1 kg unsweetened puff pastry, thawed
250 grams of Imeruli cheese or Bryndza cheese
250 g of Sulguni cheese or mozzarella
1 egg, yolk and white separated
½ cup wheat flour

Preparation:

Grate the cheese, add egg yolk and stir well. Divide the filling into 10 parts and scatter some flour over the working surface. Flatten puff pastry sheets, also divide into 10 parts and put a portion of filling on each. You can fold the pie in any shape you like, be it a triangle or a square. Finally, dab each Khachapuri with a mix of egg yolk and a bit of milk.

Place the pies on a baking sheet sprinkled with flour and bake in a preheated oven at 180-200 degrees Celsius. Bake the pie for 20-30 minutes until crisp and golden brown. Khachapuri must puff like a pillow in the oven. Serve khachapuri in 15 or 20 minutes after baking, once it cools down slightly.
