Roasted chicken stuffed with raisins – Discover unusual Georgian Recipes

Whole roasted chicken stuffed with raisins is yet another rare and distinguished Georgian dish. If you take a look at the old book of traditional Georgian cuisine, you will come across many unusual and almost forgotten recipes of extremely delicious dishes. Here we present to you one of them found in a famous Georgian cook Barbare Jorjadze’s book dating back to 1914.


One chicken
500 grams of raisins
200 grams of butter
100 grams of honey
100 grams of
Salt to taste


Clean the chicken and boil in salty water until partially done. In the meanwhile wash raisins and fry them in butter over medium heat. Add honey, sugar, mix up well and remove the pan from the stove.
Stuff chicken with the mixture and close it up using needle and thread. Sprinkle stuffed chicken with salt, pour a bit of broth over it and place in the pre-heated oven to 200 degrees. Fry chicken for 15 minutes over this temperature. Then decrease temperature to 170 degrees and fry chicken until golden brown. During cooking process gradually pour the pan juices over the top.
