Perfect dish for your Christmas table - Roasted turkey stuffed with dried fruit

Christmas and New Year are family holidays, with all members gathering around one table and enjoying delicious food. Turkey is the staple of the New Year’s table in many countries and Georgia is no exception.Turkey in walnut sauce named satsivi is a frequent sight in many Georgian households, but you can also come across a rather old and almost forgotten dish - fried turkey stuffed with dried fruits. Bring novelty to your Christmas table and surprise your family members with this
delicious recipe.

Ingredients:


One turkey (5kg)
6 quinces
500 g of rise
200 g of raisins
200 g of dried fruit
Salt, pepper and savory to taste
Butter

Preparation:

Clean and wash the turkey thoroughly. Place turkey in a large saucepan along with peeled quinces, cover with water and bring to boil. As soon as the quinces are ready take them out. When the meat is soft and ready, remove it from the fire and let it cool. Separately mix 500 grams of boiled rice with chopped dried fruits (plum or apricot), quinces, raisins, and three table spoons of butter. Add salt, pepper and savory to your your taste.
Stuff turkey with the mixture and sew it closed using needle and thread. Brush turkey with butter, sprinkle with salt , place turkey breast side up and bake in the preheated oven over 160 degrees for 3 hours. After the first half of the alotted time passes, carefully turn the turkey over. When it turns golden-brown, remove it from the oven and allow to rest in a warm area 10 to 15 minutes before serving.
