Kveri – Georgian dumplings with cheese from Samegrelo

Kveri is yet another increasingly delicious Georgian dish from Samegerelo region. These are pancakes or dumplings filled with sulguni cheese inside. The key ingredient to Kveri is the soft and juicy sulguni cheese that reminds of Italian mozzarella. Kveri  is usually round or crescent-shaped. Preparation of dumplings takes just 30 minutes.


Wheat flour -1 kg
Egg - 1
Salt to taste
Sulguni cheese -1 kg


Add egg, salt and water (by eye) in the sifted flour, pouring in little
quantities and a thin stream. Knead the dough until it is resilient and elastic. Cover the dough with a towel and leave untouched for 20-30 minutes.

Divide dough into 45 little balls, each of them weighing approximately 18 grams. Use a small amount of flour so that the dough does not become sticky and roll out each ball with rolling pin, giving them the form of pancakes (2 millimeters in thickness) and keeping their round form.

Grate the cheese , divide it into several parts weighing 20 grams and shape balls from it. Put the cheese balls in the middle of the flat round dough, tightly join opposite inner edges and moisten them with brush and little amount of water. You can either shape a crescent or simply flatten and leave it round.
Drop five pieces "kveri" in boiling salted water. From time to time, to prevent sticking, stir with a wooden spoon and after the kveris float to the surface on their own, boil 3-5 minutes more. Take ready kveris from  water and serve with a piece of butter. Dish also pairs well with sour cream or matsoni (Georgian unsweetened yogurt).
