Adjarian style lobiani – Must try Georgian bean dish

Boat-shaped Adjaruli khacahpuri has become so popular that Georgian chefs have invented different variations of it for vegans with beans, spinach or other vegetables as well as with chopped meat. This recipe will teach you how to prepare lobiani (Georgian bean pie) in Adjarian style.

Ingredients for dough:

Flour – 500g
Water/milk – 250 ml
Oil – 2-3 tbsp
One tbsp of yeast
1stp of sugar
1stp of salt

Ingredients for filling:

Kidney beans – 500g
Butter or vegan butter
- 100 g
Salt/ pepper to your taste
One onion
Two bay leaves


Mix dry ingredients, slowly add warm milk or water to the bowl and gently mix the ingredients with your hand. When the dough is smooth and elastic cover the bowl with towel and leave in a warm place for one or two hours for the dough to rise.

Boil kidney beans together with bay leaves. When the beans are ready pour out all of the water. Thoroughly smash the beans together with butter until it has smooth consistency. Add chopped fried onion and mix well. Add salt and pepper to taste.

Knead the dough and leave it for a rest for 10 more minutes. Separate the dough into 3 or 4 balls. Roll out each of them into an oval shape. Take quarter of bean filling and place it onto the dough. Fold the sides and ends of each piece of dough so that to get a boat shape. Bake lobiani in a preheated oven at 220- 230 degrees for over 12-15 minutes. Serve lobiani with a piece of butter and hot marinated peppers.
