Red pepper stuffed with walnuts – Excellent Georgian appetizer

Georgian cuisine is famous for its exquisite and spicy appetizers. One of the most delicious among them is red pepper filled with hearty walnut paste. Read this easy recipe and make red peppers in Georgian style by yourself.


Red bell pepper – 5
Walnuts – 150 g
Utskho suneli (fenugreek ) – ½ teaspoon
Dried coriander – ¾ teaspoon
Ground red pepper – 1 teaspoon
2 cloves of garlic
One onion
Salt, pepper to taste
Vinegar – 2 tablespoons
Sunflower oil – 1 tablespoon


Grind walnuts in the food processor together with garlic and onion. Add spices, 1 tablespoon of vinegar, 3-4 tablespoons of warm water and mix thoroughly until the mixture gets smooth.Cut peppers into halves and remove the seeds. Bring water to boil, add salt, tablespoon of oil, tablespoon of vinegar, 1 bay leaf, 1 teaspoon of sugar. Put peppers in a boiling water for about 7-12 minutes. When the peppers are ready, take them out and cool. Fill each pepper with walnuts paste using spoon and put them on a plate. Place ready peppers in the fridge fore several hours, even better to leave the dish for a night, so that all the flavors are blended well. Serve the dish cold. You can garnish red peppers with fresh chopped parsley as well. The appetizer goes well with mchadi (Georgian cornbread), sulguni (Georgian cheese) or is consumed plainly by its own with Georgian bread shoti.
