Chakhokhbili with mushroom shila plavi

Chakhokhbili (stewed chicken with fresh herbs and tomatoes) and shila plavi with mushrooms (similar to risotto) are two popular Georgian dishes that go well with each other. Tender and juicy chicken meat with a hearty portion of rice with mushrooms will be an ideal solution for your dinner. As a rule, shila plavi has a creamy consistency, but in this version each grain is distinct and not mushy.

Shila plavi

Round rice – 500 g
Mushroom (champignon) – 300 g
Onion – 2
Carrot – 1
Garlic - 3-4 cloves
Oil – 2 tablespoons
Cumin seeds – 1 teaspoon
Ground black pepper – 0,5 teaspoon
Salt to taste
Clean and boil mushrooms in salty water for 5 minutes. Drain mushrooms form excess liquid and chop them up. Cut carrot into fine little sticks. Meanwhile fry finely chopped onions in oily saucepan for 10 minutes. Add carrot to the saucepan and cook the mixture for 3 minutes. Add chopped mushrooms to the saucepan and cook until the liquid evaporates. Add rice, spices, garlic cloves and salt to the mixture. Mix up all the ingredients and pour 3-4 glasses of boiling water. After the dish starts to boil, reduce heat, cover and simmer for 5 minutes. Simmer rice for 10 more minutes at a very low heat without removing the cover. Finally cover saucepan with towel and leave it for 30 minutes, to let all the flavors combine. Before serving the mish mix up the dish once again. In order to make the dish even tastier while boiling the rice you can replace 1 glass of water with white wine.



1 Chicken
2 onions
500 g Tomato
1-2 Sweet red peppers
40 g Tomato paste
100 ml White wine or water
2-3 bunches of coriander
1 bunch of dill
2 cloves garlic
Some dried coriander
Salt, hot pepper to taste
Mashed Tomatoes

Clean, rinse and cut the chicken. Chop onions finely.
Parboil tomatoes, peel them and chop finely or mix in a blender.
Clean sweet pepper, peel it and skim. Chop up the greens.
Put chicken and onions into the saucepan, add dried coriander and sauté.
Pour a mix of tomatoes, tomato paste and sweet pepper on sautéed mass.
When it is thickened, add wine or water. Boil for 30-35 minutes. Sprinkle salt, pepper and chopped coriander in the end.
