Kharcho sauce with green tkemali

Kharcho is a popular Georgian dish made with beef and walnuts, but vegan version is also very popular in many households, especially during fast. Here we present to you the recipe of Kharcho sauce without meat that can be prepared either with beef broth or plainly with water. Here the key role plays Georgian sour tkemali sauce that makes the dish unique.


Onion – 1
Basmati rice – 2 tablespoons
Garlic – 2 cloves
Roasted walnuts – 100 g
Potato – 1
1 bunch of coriander
Fenugreek – 1 tablespoon
Salt, black pepper to taste
Dried chili pepper – 1
Green tkemali (sour plum sauce) – 100g

In case with traditional Kharcho sauce, use beef broth. Add finely chopped onion and potato cut in cubes to the broth. If you prefer vegan Kharcho sauce then first slightly fry chopped onion and potato in oily saucepan and then add water. Simmer at low heat for 10 minutes. Add rice, chili and fenugreek to the saucepan. Meanwhile blend coriander, walnuts, garlic and tkemali in the blender. As soon as rice is ready add the mixture to saucepan. Season the sauce. Simmer for 2 minutes, remove the saucepan from the stove, cover with lid and leave it for at heat 30 minutes. Karcho sauce can be either earthen on its own with corn bread mchadi, Georgian bread shoti or cornmeal ghomi or can pair well with fried meat.
