Khashlama – Beef stew with tomatoes from Kakheti

Khashlama is yet another Georgian meat dish from eastern Kakheti region. The dish is widely popular among men, for it is hearty and fatty. So if you are a big lover of meat stews, then Kashlama will certainly captivate you. Here we offer slightly different version of traditional Khashlama prepared with tomatoes.


2 kg beef or lamb (medium fat meat)
2 onions
5-6 cloves of garlic
2 tomatoes
Salt and pepper to taste

Cut beef in medium size
slices and boil well. Pour part of the broth in separate saucepan, add chopped onion, cover with lid and stew at low heat. When liquid almost evaporates add boiled meat to the saucepan and continue simmering until the meat turn golden-brown. Then add rest of the broth to meat, so that it is almost covered and let it boil. Later add chopped tomatoes, garlic, season, cover with lid and simmer for 10 minutes. Serve the dish hot Georgian bread shoti.
