Homemade lollypops Mamalo – Best candy for New Year

Homemade lollypops known as mamalo (named so because it often has the shape of a bird or a rooster), is a popular and quite old treat. The caramel candy originally called petushok (cock in Russian) was incorporated into Georgia from Russia during the Soviet times and was quite often prepared in many households, especially for Christmas and New Year. 2017 is the year of Red Cock according to the oriental horoscope, so we have decided to restore the well-known and
forgotten recipe of mamalo and present it to you.


10 tablespoons of sugar
7-10 tablespoons of water
Pinch of citric acid or one tablespoon of vinegar
Oil for brushing molds


Place all the ingredients in the saucepan and place it on the stove at medium heat. Ingredients should dissolve well and the mixture should turn into brown. In order to check if the caramel is ready, drop a small amount in cold water and if the liquid solidifies, then it is ready. Brush the molds with oil, fill them with hot syrup and place sticks in the middle of candy forms. Let lollypops cool and harden and then enjoy your mamalo.
