Dry beans (Lobio) in a pot

There are many recipes in Georgia to prepare beans. Beans prepared in a pot are of a special taste. Beans are always served with pickles. Ingredients:

3 standard onions
700 grams of dry, red beans (Lobio)
2 bunches of fresh coriander
A bunch of savory
A bunch of mint
A bunch of parsley
Small bunch of celery
4 heads of garlic
1-2 leaves of bay-tree
Cooking Oil
Salt
Pepper
Vinegar or Tkemali sauce

Preparation:

Pour hot water
onto the beans and boil, then pour away the water and arrange the beans in a pot, pour water on them again and put it on a low heat. To avoid the pot splitting, place it on a fire distributor.

After boiling for 15-20 minutes add 1 finely chopped onion and a bayleaf. If the water evaporates, add more boiling water. Chop the other onions and fry them in some oil.
When the beans are boiled, stir lightly (not to get puree), add chopped herbs, garlic, fried onions and Tkemali sauce. Continue cooking the mixture until it comes to the boil again. The dish is now ready. Keep a small amount of herbs aside to place on the beans when served at the table.
