Pkhali of New Cabbage

Pkhali is a traditional Georgian dish of chopped and minced vegetables, made of cabbage, eggplant, spinach, beans, beets and combined with ground walnuts, vinegar, onions, garlic, and herbs. In this article the receipt of Cabbage Pkhali is suggested.

Ingredients:
New cabbage - 2 pieces
Walnut - 120 grams.
Onion - 1 clove
Garlic - 3 cloves
Coriander - 1 bunch
Dried seasoning
Salt
Pepper
Pomegranate seeds (for garnish)

Preparation
Take
off the leaves of the cabbage and put them into a deep saucepan. Boil them for 5 minutes until they become softer. Then drain the water from the boiled cabbage by using a sieve.Allow to cool and then use your hands to firmly squeeze the leaves to remove as much liquid as possible.Finely chop the cabbage.
Blend the onion, garlic and coriander until you get a consistency like paste. Grind the walnut and add to the chopped cabbage and mixture of onion, garlic and coriander. For the final step, add seasoning, salt and pepper and mix very well.

Serving

Make the mixture into an oval shape and put on the plate. Make a slight hollow in the middle and put the seeds of the pomegranate inside.
