Khachapuri named Dish of the Year by af&co
af&co, a leading restaurant, and hospitality consulting firm has recently published this year’s trends report. The American company located in San Francisco, has made the predictions that are likely to bring new ideas into the hospitality industry in 2019. The title for the dish of the year nomination was given to traditional Georgian dish Khachapuri.

“Georgian cuisine is having a moment, and leading the way is the photogenic, Instagram favorite dish Khachapuri. Featuring a cheese-filled bread boat topped with a runny egg,
the egg and cheese are mixed together tableside. To enjoy, guests tear off pieces of the crust to dip in the cheesy middle. Bread… runny eggs… cheese… what’s not to like?” – says the report about Khachapuri.

Khachapuri is a cheese bread pastry usually topped with melted cheese, butter or egg. There are different types of khachapuri but it is usually filled with Georgian Sulguni or Imeretian cheese. Three of the most common varieties include the Imeretian khachapuri, shaped into a circular form, Adjarian khachapuri, the open boat shaped version topped with butter and a raw egg on top and Megrelian Khachapuri shaped into a circular form and topped with melted cheese. Khachapuri is among the 100 best-rated dishes of TasteAtlas.
