All you need for autumn is elarji with stretchy cheese

Elarji is popular and one of the most beloved dishes in Georgia’s cuisine of Samegrelo region. Elarji is a type of Georgian cornmeal ghomi prepared with cheese that stretches out into long elastic strands. The quality of elarji is determined by how elastic and stretchy the meal is. The dish is made with coarse cornmeal, yet before corn was brought to Georgia, ghomi was prepared with a certain type of grain under the same name that was widely cultivated throughout the country. Ghomi plant was replaced with corn time by time and nowadays both ghomi and elarji are usually prepared using coarse corn. The dish is extremely popular among tourists as well since it resembles Italian polenta, yet the taste still differs significantly.  In order to make ideal elarji like the one depicted on the photo, you should add Georgian sulguni cheese in large quantities to ghomi.
